Our Espadin Agaves are carefully selected by our Maestro Mezcalero from the rich traditions and heritage of Mexico. At the age of 8, when they have reached their perfect ripeness, the agaves are harvested with meticulous care. The hearts, or piñas, are slowly cooked in pre-Hispanic volcanic stone pits for 3 to 4 days, covered with their leaves to lock in the flavors. The traditional process continues as the agave juice is extracted by scraping the cooked piñas with a stone, pulled by a mule known as a Tahona. The juice is then fermented in oak vats and distilled twice in copper stills to achieve the final product.
Tasting Notes:
The mezcal opens with herbal and fruity cooked agave notes, complemented by fresh citrus aromas. Its fibrous, earthy character shines through, giving way to delicate hints of orange blossom. The finish is long and intense, with orange blossom flavors blending harmoniously with a subtle citric touch, creating a generous and inviting bouquet.
